Scalloped Celeriac and Potatoes
Excerpted from Farmer John's Cookbook. Serves 6

butter for greasing baking dish
1 lb.celeriac, peeled, halved, sliced ~1/8 inch thick
1 lb. baking potatoes, peeled, sliced ~1/8 inch thick
salt
freshly ground black pepper
1 cup grated Gruyère or domestic Swiss cheese, divided
1/2 t dried thyme
2 cups chicken, beef, or vegetable stock
2 T butter

1. Preheat the oven to 350° F. Grease a 2-quart baking dish with butter.
2. Place the celeriac and potatoes in alternating layers in the baking dish, seasoning every few layers with salt and pepper. At about the halfway point, add 1/3 cup cheese in an even layer; sprinkle with the thyme. Continue with the celeriac and potatoes, until you have used all of your slices (don't go all the way to the top edge; leave a little room to allow the liquid to boil).
3. Pour the stock over the celeriac and potatoes. Dot with butter. Cover with foil and bake for 45 minutes. Remove the foil and bake for 15 minutes more. Sprinkle the remaining 2/3 cup cheese over the top layer, add several grindings of fresh pepper, and bake until the cheese turns golden, about 15 minutes.
4. Let stand for 10 minutes before serving.
Chestnut Farms Meat Shares Available at Waltham Fields!
Beginning in January of 2008, we will be partnering with Chestnut Farms in Hardwick to offer sustainably raised local meat shares. Meat shares come in several sizes to suit any household. They can include a range of delicious cuts of beef, lamb, pork and chicken, or choose lamb- or pork-free shares. Shares will be distributed once a month, on the first Sunday of each month at Waltham Fields Community Farm. Visit Chestnut Farms' website for more information, and to take advantage of the one-month exclusive sign-up period for Waltham Fields Community Farm shareholders.
Third Sunday Gatherings

Third Sunday Gatherings are back this season! For those of you who are new to the farm or to Third Sunday Gatherings, they are a great opportunity to meet fellow shareholders and learn about various topics related to our mission. Each time, we will start with a farm-fresh potluck at five o'clock followed by a guest speaker.

December 16th - Winter Solstice - Details to follow.

January 20th, 2008 - CFO Annual Meeting - details to follow.

Share pickups at the farm are:
  • Tuesday, October 2, 3-7:30 PM
  • Thursday, October 4, 3-7:30 PM
  • Sunday, October 7, 3-7:30 PM

Share pickups in Somerville are Tuesday October 2 from 5-7 PM.

farm pickupHave you noticed th at Sunday pickups at the farm are very busy? Would you like a quieter, more intimate farm experience?  Try out our Tuesday and Thursday pickups if you can!

The final pickups of the season will be October 23, 25 and 28 at the farm and October 23 in Davis Square.

Winter CSA share pickups will be Sunday, November 18 and Sunday, December 16 from 3-6 PM at the farm. Winter shares are sold out for the season.  

If you have a fruit share (from Autumn Hills Orchard) please remember to pick yours up when you come get your vegetables.

Bring your own household compost if you don't mind the walk to the compost piles. Thanks to everyone who has brought compost!

Bring bags for pickup if you have them.

CSA shareholders may visit the farm to pick your own Sunday through Thursday during daylight hours.

Crop updates

Autumn is officially upon us, despite the warm temperatures of the past week. The chill that's in the air in the mornings will bring a killing frost one day soon, bringing an official end to our peppers, eggplant, basil and cherry tomatoes. At the same time, it will sweeten up our root crops and greens and make cozy late-season recipes even more appealing. For now, though, it's warm and dry and crops are continuing to grow. It has been difficult to get our cover crop to germinate without rain, and since cover crop represents fertility for next season, we've been trying to irrigate as much as we can to get those oats and peas, winter rye and hairy vetch up and growing. Aside from that, most of what we're doing these days is harvesting, cleaning up the fields as crops finish, and organizing the farm for next season. The last big project that we have to do, planting next year's garlic, needs to wait until it gets a little cooler. Breaking up garlic is usually a rainy-day task, but we've given up hoping for rain!

Comings and goings on the farm

Temple Isaiah, Beth El Temple and Temple Beth Elohim all helped out at the farm this month!  Sunday school students from Beth El harvested 500 pounds of collard greens for Food for Free and the Waltham Red Cross Food Pantry, while students from Templeacorn squash a-go-go Isaiah picked 250 pounds of carrots for donation to the Waldorf School in Lexington (for Farm to School Week), Healthy Waltham for snacks for Waltham Walks in the Woods, and the Greater Boston Food Bank. 

Thanks to all who have helped our hunger relief efforts so far this season!
