Garlic Scapes

In the spring you'll start to see garlic in the form of scapes. The scape is the flower stalk of the garlic plant.

Since these are cut in late spring, long before the garlic bulbs are ready to harvest, a scape is a wonderful substitute for fresh garlic. Chop and use as you would garlic or make a scape pesto. It can also be par boiled if a less crunchy texture is desired.

Keep scapes in a brown paper bag in the refrigerator and they will last for weeks. They can also be chopped, placed in containers, and frozen.

Nutty Herbs and Scape Pesto

I recently threw the following ingredients in a food processor and then spread the resulting sauce on a homemade pizza. It would have also worked on pasta, bread, or one of the many other dishes which are enhanced with a little pesto. Unfortunately I didn't measure anything out so the measurements included here are just estimates. Liz

  • 5 fresh garlic scapes
  • 1/2 cup fresh basil
  • 1/4 cup fresh parsley
  • 3 tbls fresh oregano
  • 1/2 tsp salt
  • 1/4 cup cashews
  • 2 tbls pine nuts
  • 1/4 cup peanut oil (I was out of olive oil or would have used that) -- the oil quantity is really a guess. Process all the other ingredients until finely chopped and blended and then pour the oil in slowly while the processor is running and add enough to get the right consistency.

Since the measurements above are just estimates I did a quick search on the web for a more exact recipe. While I didn't find anything that seemed quite like my pesto I did find the following website which has lots of interesting sounding scape recipes including several varieties of pesto. http://www.dakotagarlic.com/garlic_scape_recipes.htm
